Life Changing Loaf
This recipe is from the blog My New Roots. It’s named the Life Changing Loaf, and I can say with confidence this recipe will change your breakfast game. I’ve been making it for 3 years now, and haven’t looked back. It’s fast, easy, inexpensive, and packed with nutrients.
I like to use ground flax seeds instead of whole so that the nutrients from the seeds are easily absorbed. I find it bakes just fine with ground flax, no changes needed. I also use avocado oil instead of coconut oil because I don’t have a microwave to melt the coconut oil. Lastly, you don’t need a silicone bread pan, you can use whatever you’ve got. Just oil a regular bread pan, or use some parchment paper. Once you’ve baked up your loaf, pop it in a container and store it in the fridge for the longest life. My favorite way to enjoy this is to pop a slice in the toaster and top it with either avocado + salt or tahini + honey.
Variations
1/4 cup golden raisins + 1 tsp toasted fennel seeds
1/4 cup dried blueberries + 1 tsp cardamom
1/4 cup chopped olives + 1 tsp thyme
1/4 cup chopped dates + 1 tsp cinnamon
